Fried Salsify And Celeriac Croquettes
Ingredients
- 2 roots salsify
- 1 large celeriac
- Vinegar and water for soaking
- Boiling water for cooking
- Salt and pepper to taste
- Few drops onion juice
- 1 tbsp butter
- 2 tbsp milk
- 1 tbsp cream
- 1 egg
- Egg for dipping
- Cracker crumbs for coating
- Oil for frying
Method
- 1 Wash, scrape, and cut salsify and celeriac into pieces. Cover with vinegar and water for 1 hour to prevent browning.
- 2 Drain vinegar mixture, cover with boiling water, and cook until very tender. Drain well.
- 3 Mash vegetables smooth. Season with salt, pepper, and onion juice. Stir in butter, milk, cream, and egg over heat.
- 4 Turn mixture into a bowl and cool completely. Shape into croquettes.
- 5 Dip croquettes in beaten egg, coat with cracker crumbs, and fry in hot oil until golden.
