Fried Salsify And Celeriac Croquettes

Ingredients

  • 2 roots salsify
  • 1 large celeriac
  • Vinegar and water for soaking
  • Boiling water for cooking
  • Salt and pepper to taste
  • Few drops onion juice
  • 1 tbsp butter
  • 2 tbsp milk
  • 1 tbsp cream
  • 1 egg
  • Egg for dipping
  • Cracker crumbs for coating
  • Oil for frying

Method

  1. 1 Wash, scrape, and cut salsify and celeriac into pieces. Cover with vinegar and water for 1 hour to prevent browning.
  2. 2 Drain vinegar mixture, cover with boiling water, and cook until very tender. Drain well.
  3. 3 Mash vegetables smooth. Season with salt, pepper, and onion juice. Stir in butter, milk, cream, and egg over heat.
  4. 4 Turn mixture into a bowl and cool completely. Shape into croquettes.
  5. 5 Dip croquettes in beaten egg, coat with cracker crumbs, and fry in hot oil until golden.
