Fried Sage Potato Onion Fritters

Ingredients

  • 1 ¾ cup mashed potatoes
  • ½ lb breadcrumbs
  • 1 large English onion
  • 2 eggs
  • 1 oz butter
  • 1 tsp powdered sage
  • 1/8 tsp nutmeg
  • salt and pepper to taste
  • flour for dredging

Method

  1. 1 Chop the onion finely and fry it in the butter until brown.
  2. 2 Whip the eggs and mix with the breadcrumbs, fried onion, mashed potatoes, sage, nutmeg, salt, and pepper.
  3. 3 Form the mixture into fritters and dredge them in flour.
  4. 4 Fry the fritters in oil until golden brown.
  5. 5 Serve with vegetables, potatoes, and sauce.
