Fried Rice Puffs
Ingredients
- ¼ lb. rice
- 1 pint water
- 1 piece sugar
- 1 piece lemon peel
- 3 egg yolks
- 1 small amount flour
- 1 egg white
- Confectioners' sugar for serving
Method
- 1 Cook rice in water with sugar and lemon peel until thoroughly done. Remove lemon peel and let cool.
- 2 Stir in egg yolks and a little flour. Mix well and let rest for several hours.
- 3 Beat egg white to stiff peaks. Fold into the rice mixture.
- 4 Drop tablespoonfuls of batter into hot oil and fry until golden.
- 5 Serve hot, sprinkled with confectioners' sugar.
