Fried Rice Puffs

Ingredients

  • ¼ lb. rice
  • 1 pint water
  • 1 piece sugar
  • 1 piece lemon peel
  • 3 egg yolks
  • 1 small amount flour
  • 1 egg white
  • Confectioners' sugar for serving

Method

  1. 1 Cook rice in water with sugar and lemon peel until thoroughly done. Remove lemon peel and let cool.
  2. 2 Stir in egg yolks and a little flour. Mix well and let rest for several hours.
  3. 3 Beat egg white to stiff peaks. Fold into the rice mixture.
  4. 4 Drop tablespoonfuls of batter into hot oil and fry until golden.
  5. 5 Serve hot, sprinkled with confectioners' sugar.
