Fried Rice Cakes With Nutmeg
Ingredients
- 1/2 cup rice
- 2 1/2 cups boiling water
- 1/2 yeast cake
- 1/2 cup water (80°F)
- 1/2 tsp salt
- 4 tbsp sugar
- 1/2 cup sifted flour
- 2 well-beaten eggs
- 5 tbsp sugar
- 4 tbsp flour
- 1 tsp nutmeg
- 1 1/2 cups vegetable oil
- powdered sugar for dusting
Method
- 1 Wash rice and cook in boiling water until tender. Cool and mash well.
- 2 Dissolve yeast in warm water. Mix with salt, 4 tbsp sugar, 1/2 cup flour, and mashed rice. Beat well, cover, and let rise overnight.
- 3 In the morning, beat in eggs, 5 tbsp sugar, 4 tbsp flour, and nutmeg. Let rise for 45 minutes in a warm room.
- 4 Heat oil in a pan until a bread crust browns in 40 seconds. Drop batter by spoonfuls and fry until golden brown.
- 5 Drain on soft paper. Serve hot, dusted with powdered sugar and nutmeg.
