Fried Rice Cakes With Nutmeg

Ingredients

  • 1/2 cup rice
  • 2 1/2 cups boiling water
  • 1/2 yeast cake
  • 1/2 cup water (80°F)
  • 1/2 tsp salt
  • 4 tbsp sugar
  • 1/2 cup sifted flour
  • 2 well-beaten eggs
  • 5 tbsp sugar
  • 4 tbsp flour
  • 1 tsp nutmeg
  • 1 1/2 cups vegetable oil
  • powdered sugar for dusting

Method

  1. 1 Wash rice and cook in boiling water until tender. Cool and mash well.
  2. 2 Dissolve yeast in warm water. Mix with salt, 4 tbsp sugar, 1/2 cup flour, and mashed rice. Beat well, cover, and let rise overnight.
  3. 3 In the morning, beat in eggs, 5 tbsp sugar, 4 tbsp flour, and nutmeg. Let rise for 45 minutes in a warm room.
  4. 4 Heat oil in a pan until a bread crust browns in 40 seconds. Drop batter by spoonfuls and fry until golden brown.
  5. 5 Drain on soft paper. Serve hot, dusted with powdered sugar and nutmeg.
