Fried Rice And Potato Croquettes

Ingredients

  • 1/2 pound cooked rice
  • 1/2 pound mashed potatoes
  • 2 teaspoons parsley
  • 2 shallots
  • 1/2 teaspoon salt
  • 1/2 teaspoon mixed herbs
  • A little pepper
  • 1/2 teaspoon grated lemon rind
  • Egg and bread crumbs

Method

  1. 1 Chop the parsley and shallots finely.
  2. 2 Mix the chopped herbs with the cooked rice, mashed potatoes, salt, mixed herbs, pepper, and grated lemon rind until well combined.
  3. 3 Shape the mixture into small balls.
  4. 4 Roll each ball in egg and then in bread crumbs to coat.
  5. 5 Fry in boiling oil until golden brown, about 30 seconds.
