Fried Rice And Potato Croquettes
Ingredients
- 1/2 pound cooked rice
- 1/2 pound mashed potatoes
- 2 teaspoons parsley
- 2 shallots
- 1/2 teaspoon salt
- 1/2 teaspoon mixed herbs
- A little pepper
- 1/2 teaspoon grated lemon rind
- Egg and bread crumbs
Method
- 1 Chop the parsley and shallots finely.
- 2 Mix the chopped herbs with the cooked rice, mashed potatoes, salt, mixed herbs, pepper, and grated lemon rind until well combined.
- 3 Shape the mixture into small balls.
- 4 Roll each ball in egg and then in bread crumbs to coat.
- 5 Fry in boiling oil until golden brown, about 30 seconds.
