Fried Potatoes With Onions And Green Peppers

Ingredients

  • 1 lb potatoes
  • 2 medium onions
  • 1 green mango pepper
  • 4 tbsp water
  • cayenne pepper
  • oil or Crisco for frying

Method

  1. 1 Fry chopped onions in plenty of oil or Crisco until nicely browned.
  2. 2 Add diced potatoes and chopped green mango pepper (or onion tops with cayenne if pepper is unavailable).
  3. 3 Add 4 tablespoons of water and a sprinkle of cayenne if desired.
  4. 4 Cook very slowly, adding more water if needed, until tender.
