Fried Potatoes With Onions And Green Peppers
Ingredients
- 1 lb potatoes
- 2 medium onions
- 1 green mango pepper
- 4 tbsp water
- cayenne pepper
- oil or Crisco for frying
Method
- 1 Fry chopped onions in plenty of oil or Crisco until nicely browned.
- 2 Add diced potatoes and chopped green mango pepper (or onion tops with cayenne if pepper is unavailable).
- 3 Add 4 tablespoons of water and a sprinkle of cayenne if desired.
- 4 Cook very slowly, adding more water if needed, until tender.
