Fried Potato Croquettes With Cream
Ingredients
- 2 large boiled potatoes, peeled and grated
- 2 large eggs, well beaten
- 2 tablespoons heavy cream
- Salt to taste
- Clarified butter for frying
Method
- 1 Grate the boiled, peeled potatoes into a bowl.
- 2 Add the beaten eggs, cream, and salt to the potatoes. Mix thoroughly until combined.
- 3 Heat clarified butter in a pan over medium heat.
- 4 Drop spoonfuls of the potato mixture into the hot butter and fry until golden brown on both sides.
