Fried Parsnip Cakes

Ingredients

  • 6 or 7 parsnips
  • 1 tablespoon butter or shortening
  • 2 eggs
  • ½ cup dry bread crumbs
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • Pepper to taste
  • Milk for dipping
  • Corn meal or bread crumbs for coating

Method

  1. 1 Boil parsnips in salted water until soft. Peel, remove the core, and mash them.
  2. 2 Mix the mashed parsnips with butter, 1 egg, the beaten egg white, bread crumbs, sugar, salt, and pepper. Form into cakes.
  3. 3 Beat the remaining egg yolk with a little milk. Dip cakes in the mixture, then roll in corn meal or bread crumbs.
  4. 4 Fry the patties in hot fat until golden brown on both sides.
