Fried Parsnip Cakes
Ingredients
- 6 or 7 parsnips
- 1 tablespoon butter or shortening
- 2 eggs
- ½ cup dry bread crumbs
- 1 teaspoon sugar
- ½ teaspoon salt
- Pepper to taste
- Milk for dipping
- Corn meal or bread crumbs for coating
Method
- 1 Boil parsnips in salted water until soft. Peel, remove the core, and mash them.
- 2 Mix the mashed parsnips with butter, 1 egg, the beaten egg white, bread crumbs, sugar, salt, and pepper. Form into cakes.
- 3 Beat the remaining egg yolk with a little milk. Dip cakes in the mixture, then roll in corn meal or bread crumbs.
- 4 Fry the patties in hot fat until golden brown on both sides.
