Fried Parmesan Cheese Puffs With Cayenne
Ingredients
- ½ cup water
- ¼ cup butter
- ½ cup flour
- 2 eggs plus 1 egg yolk
- Pinch of cayenne
- Pinch of salt
- 2 ounces grated Parmesan cheese
- Hot fat for frying
Method
- 1 Boil water and butter in a pan. Sift in flour, salt, and cayenne. Stir vigorously and cook until the mixture pulls away from the sides of the pan.
- 2 Let the mixture cool slightly. Add eggs one at a time, beating thoroughly after each addition until smooth. Stir in the grated Parmesan cheese.
- 3 Drop teaspoonfuls of the batter into hot fat and fry until golden brown. Drain on paper towels and serve immediately.
