Fried Parmesan Cheese Puffs With Cayenne

Ingredients

  • ½ cup water
  • ¼ cup butter
  • ½ cup flour
  • 2 eggs plus 1 egg yolk
  • Pinch of cayenne
  • Pinch of salt
  • 2 ounces grated Parmesan cheese
  • Hot fat for frying

Method

  1. 1 Boil water and butter in a pan. Sift in flour, salt, and cayenne. Stir vigorously and cook until the mixture pulls away from the sides of the pan.
  2. 2 Let the mixture cool slightly. Add eggs one at a time, beating thoroughly after each addition until smooth. Stir in the grated Parmesan cheese.
  3. 3 Drop teaspoonfuls of the batter into hot fat and fry until golden brown. Drain on paper towels and serve immediately.
