Fried Parmesan Cheese Balls

Ingredients

  • 4 oz fine bread crumbs
  • 4 oz grated Parmesan cheese
  • 2 oz butter
  • salt and cayenne to taste
  • 1 well-beaten egg
  • bread crumbs for coating

Method

  1. 1 In a mortar, pound together bread crumbs, Parmesan cheese, butter, salt, and cayenne until thoroughly combined.
  2. 2 Bind the mixture with the beaten egg and form into small balls.
  3. 3 Dip each ball in egg, then roll in bread crumbs to coat.
  4. 4 Fry in hot oil until light brown and crisp.
  5. 5 Drain on paper towels and serve immediately while very hot.
