Fried Oysters With Butter And Orange Juice
Ingredients
- 2 quarts large oysters, parboiled in their own liquor and washed in warm water
- Breadcrumbs
- Flour
- Clarified butter, for frying
- Buttered prawns or shrimp
- Cream
- Sweet butter
- Beaten butter
- Orange juice
- Bay leaves
- Slices of oranges or lemons
Method
- 1 Parboil oysters in their own liquor, then wash in warm water. Pat dry.
- 2 Dredge oysters in flour, then coat with breadcrumbs.
- 3 Fry oysters in clarified butter until crisp and white. Remove and drain.
- 4 Arrange buttered prawns or shrimp in the bottom of a clean serving dish.
- 5 Place fried oysters around the prawns. Drizzle with beaten butter and orange juice.
- 6 Garnish with bay leaves and slices of oranges or lemons. Serve immediately.
