Fried Oysters With Butter And Orange Juice

Ingredients

  • 2 quarts large oysters, parboiled in their own liquor and washed in warm water
  • Breadcrumbs
  • Flour
  • Clarified butter, for frying
  • Buttered prawns or shrimp
  • Cream
  • Sweet butter
  • Beaten butter
  • Orange juice
  • Bay leaves
  • Slices of oranges or lemons

Method

  1. 1 Parboil oysters in their own liquor, then wash in warm water. Pat dry.
  2. 2 Dredge oysters in flour, then coat with breadcrumbs.
  3. 3 Fry oysters in clarified butter until crisp and white. Remove and drain.
  4. 4 Arrange buttered prawns or shrimp in the bottom of a clean serving dish.
  5. 5 Place fried oysters around the prawns. Drizzle with beaten butter and orange juice.
  6. 6 Garnish with bay leaves and slices of oranges or lemons. Serve immediately.
