Fried Oyster Croquettes In Shells

Ingredients

  • 25 oysters, washed and chopped fine
  • 1 cup very thick cream sauce
  • 1 tablespoon grated onion
  • 2 tablespoons finely minced parsley
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon mustard
  • 1 tablespoon Worcestershire sauce
  • 2 hard-boiled eggs, chopped fine
  • 1/2 cup fine bread crumbs
  • 1 dozen deep oyster shells, scrubbed clean
  • beaten egg for brushing
  • fine bread crumbs for coating
  • hot fat for frying

Method

  1. 1 Chop 25 oysters fine and place in a bowl.
  2. 2 Add cream sauce, grated onion, parsley, salt, paprika, mustard, Worcestershire sauce, chopped hard-boiled eggs, and 1/2 cup bread crumbs. Mix thoroughly.
  3. 3 Pour mixture onto a platter and chill.
  4. 4 Fill clean oyster shells with the chilled mixture.
  5. 5 Brush each shell with beaten egg and cover with fine bread crumbs.
  6. 6 Fry in hot fat until golden brown.
