Fried Oyster Croquettes In Shells
Ingredients
- 25 oysters, washed and chopped fine
- 1 cup very thick cream sauce
- 1 tablespoon grated onion
- 2 tablespoons finely minced parsley
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon mustard
- 1 tablespoon Worcestershire sauce
- 2 hard-boiled eggs, chopped fine
- 1/2 cup fine bread crumbs
- 1 dozen deep oyster shells, scrubbed clean
- beaten egg for brushing
- fine bread crumbs for coating
- hot fat for frying
Method
- 1 Chop 25 oysters fine and place in a bowl.
- 2 Add cream sauce, grated onion, parsley, salt, paprika, mustard, Worcestershire sauce, chopped hard-boiled eggs, and 1/2 cup bread crumbs. Mix thoroughly.
- 3 Pour mixture onto a platter and chill.
- 4 Fill clean oyster shells with the chilled mixture.
- 5 Brush each shell with beaten egg and cover with fine bread crumbs.
- 6 Fry in hot fat until golden brown.
