Fried Onion Creamy Sieved Potato Celery Soup
Ingredients
- 2 medium potatoes
- 1 small onion, chopped fine
- 2 tbsp butter or vegetable butter
- 1/2 cup milk
- 1 1/2 cups water
- 1 stalk celery
- Salt and pepper to taste
Method
- 1 Peel, wash, and chop the potatoes and celery. Chop the onion.
- 2 Fry the onion in butter until nicely browned.
- 3 Add potatoes, celery, and water. Boil until vegetables are tender.
- 4 Rub the cooked vegetables through a sieve back into the saucepan.
- 5 Stir in milk, remaining onion, salt, and pepper. Boil up and serve.
