Fried Meat And Chicken Cakes
Ingredients
- 1 lb cold cooked meat or chicken, finely chopped, skin and gristle removed
- ¼ lb sifted bread crumbs
- 4-5 drops anchovy essence
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 1 egg, beaten
- Additional bread crumbs for coating
- Butter for frying
- Boiled Italian pasta for garnish
Method
- 1 Finely chop the cold meat or chicken, ensuring it is free of skin and gristle.
- 2 In a bowl, combine the meat, bread crumbs, anchovy essence, parsley, salt, and pepper. Add enough beaten egg to moisten the mixture.
- 3 Flour your hands and roll the mixture into small cakes, about the size of a half-crown coin. Flatten them slightly with the back of a spoon.
- 4 Dip each cake in beaten egg, then coat thoroughly with fine bread crumbs.
- 5 Fry the cakes in butter over medium heat until lightly browned on both sides.
- 6 Serve immediately on a hot dish, garnished with boiled Italian pasta.
