Ingredients

  • 1 lb cold cooked meat or chicken, finely chopped, skin and gristle removed
  • ¼ lb sifted bread crumbs
  • 4-5 drops anchovy essence
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 1 egg, beaten
  • Additional bread crumbs for coating
  • Butter for frying
  • Boiled Italian pasta for garnish

Method

  1. 1 Finely chop the cold meat or chicken, ensuring it is free of skin and gristle.
  2. 2 In a bowl, combine the meat, bread crumbs, anchovy essence, parsley, salt, and pepper. Add enough beaten egg to moisten the mixture.
  3. 3 Flour your hands and roll the mixture into small cakes, about the size of a half-crown coin. Flatten them slightly with the back of a spoon.
  4. 4 Dip each cake in beaten egg, then coat thoroughly with fine bread crumbs.
  5. 5 Fry the cakes in butter over medium heat until lightly browned on both sides.
