Fried Lobster Cutlets
Ingredients
- 1 lobster
- 1.5 oz butter
- 1 oz flour
- 0.25 cup cold water
- 2 tbsp cream
- few drops lemon juice
- cayenne pepper
- black pepper and salt
- lobster spawn or coral
- egg for washing
- bread crumbs
- parsley
Method
- 1 Remove lobster flesh and cut it up. Pound coral with half an ounce of butter and rub through a sieve.
- 2 Melt 1 oz butter in a stewpan, mix in flour, add water, and stir until thickened.
- 3 Add the coral mixture, cream, lemon juice, cayenne, pepper, salt, and chopped lobster. Cook well.
- 4 Spread mixture on a plate to cool completely, then shape into cutlets.
- 5 Dip cutlets in egg, coat with bread crumbs, and fry in hot fat. Garnish with fried parsley.
