Fried Lobster Cutlets

Ingredients

  • 1 lobster
  • 1.5 oz butter
  • 1 oz flour
  • 0.25 cup cold water
  • 2 tbsp cream
  • few drops lemon juice
  • cayenne pepper
  • black pepper and salt
  • lobster spawn or coral
  • egg for washing
  • bread crumbs
  • parsley

Method

  1. 1 Remove lobster flesh and cut it up. Pound coral with half an ounce of butter and rub through a sieve.
  2. 2 Melt 1 oz butter in a stewpan, mix in flour, add water, and stir until thickened.
  3. 3 Add the coral mixture, cream, lemon juice, cayenne, pepper, salt, and chopped lobster. Cook well.
  4. 4 Spread mixture on a plate to cool completely, then shape into cutlets.
  5. 5 Dip cutlets in egg, coat with bread crumbs, and fry in hot fat. Garnish with fried parsley.
