Fried Lobster And Bread Rolls
Ingredients
- 1/2 loaf stale bread
- cold water
- 1 small onion, finely chopped
- 2 tbsp butter
- meat of 1 large lobster, chopped
- salt
- cayenne pepper
- nutmeg
- 2 egg yolks
- flour
- egg wash
- bread crumbs
Method
- 1 Soak stale bread in cold water, then squeeze dry in a cloth.
- 2 Sauté chopped onion in butter until brown. Add bread and stir well.
- 3 Stir in chopped lobster meat, salt, cayenne, and nutmeg. Heat through.
- 4 Remove from heat, stir in egg yolks, and turn out to cool completely.
- 5 Form mixture into rolls, coat in flour, egg, and bread crumbs.
- 6 Fry in oil until golden brown and serve hot.
