Fried Lima Bean Croquettes
Ingredients
- 3/4 cup baby lima beans
- 1 green pepper
- 2 medium onions
- 4 pieces bacon
- 1 tsp paprika
- 2 tbsp minced parsley
- 1 tsp Worcestershire sauce
- flour for dredging
- 1 egg, beaten with 4 tbsp evaporated milk
- fine bread crumbs
- hot fat for frying
Method
- 1 Soak lima beans overnight, then parboil until tender. Drain thoroughly.
- 2 Chop green pepper, onions, and bacon. Cook until soft, then drain off fat.
- 3 Chop the drained beans. Mix with the cooked vegetables, bacon, paprika, parsley, and Worcestershire sauce.
- 4 Mold mixture into cylindrical or conical shapes. Dredge in flour, dip in egg mixture, and roll in bread crumbs.
- 5 Fry in hot fat until golden brown. Serve with cream or tomato sauce.
