Fried Lentil Patties

Ingredients

  • 1/2 lb lentils
  • 1 onion, finely chopped
  • 3/4 cup breadcrumbs
  • 3/4 cup canned tomatoes
  • 1 1/2 oz butter
  • 2 eggs
  • salt and pepper to taste
  • breadcrumbs for coating
  • butter, vegetable butter, or oil for frying

Method

  1. 1 Pick and wash lentils; boil in water to cover until absorbed.
  2. 2 Add tomatoes and more water if needed; simmer until lentils are soft and puree-like (1 to 1.5 hours).
  3. 3 Fry chopped onion in 1.5 oz butter; mix into lentils with salt and pepper.
  4. 4 Cool lentil mixture, then mix with breadcrumbs and one beaten egg.
  5. 5 Form into patties, roll in beaten egg and breadcrumbs, then fry in hot oil or butter until brown.
  6. 6 Drain and serve.
