Fried Lentil Patties
Ingredients
- 1/2 lb lentils
- 1 onion, finely chopped
- 3/4 cup breadcrumbs
- 3/4 cup canned tomatoes
- 1 1/2 oz butter
- 2 eggs
- salt and pepper to taste
- breadcrumbs for coating
- butter, vegetable butter, or oil for frying
Method
- 1 Pick and wash lentils; boil in water to cover until absorbed.
- 2 Add tomatoes and more water if needed; simmer until lentils are soft and puree-like (1 to 1.5 hours).
- 3 Fry chopped onion in 1.5 oz butter; mix into lentils with salt and pepper.
- 4 Cool lentil mixture, then mix with breadcrumbs and one beaten egg.
- 5 Form into patties, roll in beaten egg and breadcrumbs, then fry in hot oil or butter until brown.
- 6 Drain and serve.
