Fried Lentil And Vermicelli Cakes
Ingredients
- 2 oz Egyptian lentils, picked and washed
- 1 small onion, finely chopped and fried
- 2 tsp cold boiled vermicelli
- 1 egg
- breadcrumbs
- seasoning to taste
- vegetable butter or butter for frying
Method
- 1 Stew the lentils with the onion in just enough water to cover them until cooked into a thick purée.
- 2 Season to taste, stir in the vermicelli, and form the mixture into 1 or 2 cakes.
- 3 Dip the cakes in egg and breadcrumbs, then fry in vegetable butter or butter.
- 4 Serve with potatoes and green vegetables.
