Fried Lentil And Vermicelli Cakes

Ingredients

  • 2 oz Egyptian lentils, picked and washed
  • 1 small onion, finely chopped and fried
  • 2 tsp cold boiled vermicelli
  • 1 egg
  • breadcrumbs
  • seasoning to taste
  • vegetable butter or butter for frying

Method

  1. 1 Stew the lentils with the onion in just enough water to cover them until cooked into a thick purée.
  2. 2 Season to taste, stir in the vermicelli, and form the mixture into 1 or 2 cakes.
  3. 3 Dip the cakes in egg and breadcrumbs, then fry in vegetable butter or butter.
  4. 4 Serve with potatoes and green vegetables.
