Fried Herbed Fish Cakes

Method
- 1 Poach the fish in boiling water until cooked enough to easily remove bones.
- 2 Finely chop the fish flesh along with aromatic herbs and spices, mixing them thoroughly.
- 3 Place the mixture in a wide, perforated linen cloth and squeeze firmly to remove excess moisture.
- 4 Heat olive oil in a skillet and fry the shaped fish mixture until golden brown.
