Fried Haricot Bean Croquettes

Ingredients

  • 1 pound haricot bean pulp
  • 2 ounces bread crumbs
  • 1 pound mashed potatoes
  • 1 shallot, finely minced
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • Additional bread crumbs for rolling
  • Oil for frying

Method

  1. 1 Rub well-cooked haricots through a wire sieve to obtain the pulp.
  2. 2 In a bowl, combine the bean pulp, bread crumbs, mashed potatoes, minced shallot, salt, and half of the beaten egg. Stir until well mixed.
  3. 3 Shape the mixture into small balls the size of marbles.
  4. 4 Roll each ball in the remaining beaten egg, then coat thoroughly in the additional bread crumbs.
  5. 5 Fry in hot oil until golden brown and crispy.
