Fried Haricot Bean Croquettes
Ingredients
- 1 pound haricot bean pulp
- 2 ounces bread crumbs
- 1 pound mashed potatoes
- 1 shallot, finely minced
- 1 egg, beaten
- 1/2 teaspoon salt
- Additional bread crumbs for rolling
- Oil for frying
Method
- 1 Rub well-cooked haricots through a wire sieve to obtain the pulp.
- 2 In a bowl, combine the bean pulp, bread crumbs, mashed potatoes, minced shallot, salt, and half of the beaten egg. Stir until well mixed.
- 3 Shape the mixture into small balls the size of marbles.
- 4 Roll each ball in the remaining beaten egg, then coat thoroughly in the additional bread crumbs.
- 5 Fry in hot oil until golden brown and crispy.
