Fried Ham Croquettes
Ingredients
- 1 cup cold boiled ham, finely chopped
- ½ cup milk
- ¾ cup stale bread crumbs
- 2 egg yolks, beaten
- Salt, cayenne, and nutmeg to taste
- 1 tablespoon chopped parsley
- 1 egg, beaten (for dipping)
- Bread crumbs (for coating)
- Boiling fat for frying
Method
- 1 Chop the cold boiled ham finely. In a saucepan, heat the milk over the fire.
- 2 Stir in the bread crumbs, beaten egg yolks, and chopped ham. Season with salt, cayenne, and nutmeg.
- 3 Stir over the fire until hot, then add the parsley and mix well. Turn out onto a plate to cool completely.
- 4 Once cold, form the mixture into small balls. Dip each ball in beaten egg, then coat in bread crumbs.
- 5 Fry the balls in boiling fat until golden brown and heated through.
