Fried Ham Croquettes

Ingredients

  • 1 cup cold boiled ham, finely chopped
  • ½ cup milk
  • ¾ cup stale bread crumbs
  • 2 egg yolks, beaten
  • Salt, cayenne, and nutmeg to taste
  • 1 tablespoon chopped parsley
  • 1 egg, beaten (for dipping)
  • Bread crumbs (for coating)
  • Boiling fat for frying

Method

  1. 1 Chop the cold boiled ham finely. In a saucepan, heat the milk over the fire.
  2. 2 Stir in the bread crumbs, beaten egg yolks, and chopped ham. Season with salt, cayenne, and nutmeg.
  3. 3 Stir over the fire until hot, then add the parsley and mix well. Turn out onto a plate to cool completely.
  4. 4 Once cold, form the mixture into small balls. Dip each ball in beaten egg, then coat in bread crumbs.
  5. 5 Fry the balls in boiling fat until golden brown and heated through.
