Ingredients

  • 1 cup cooked ham, finely chopped
  • 1 cup bread crumbs
  • 2 cups cooked potatoes, mashed
  • 1 heaping tablespoon butter
  • 2 eggs
  • dash of cayenne

Method

  1. 1 Melt the butter in a bowl.
  2. 2 Add the chopped ham, bread crumbs, mashed potatoes, butter, eggs, and cayenne. Beat the mixture until very light and well combined.
  3. 3 Shape the mixture into small flat cakes.
  4. 4 Dip each cake in beaten egg, then coat with bread crumbs.
  5. 5 Fry in oil until browned on both sides.
