Fried Ham And Potato Cakes
Ingredients
- 1 cup cooked ham, finely chopped
- 1 cup bread crumbs
- 2 cups cooked potatoes, mashed
- 1 heaping tablespoon butter
- 2 eggs
- dash of cayenne
Method
- 1 Melt the butter in a bowl.
- 2 Add the chopped ham, bread crumbs, mashed potatoes, butter, eggs, and cayenne. Beat the mixture until very light and well combined.
- 3 Shape the mixture into small flat cakes.
- 4 Dip each cake in beaten egg, then coat with bread crumbs.
- 5 Fry in oil until browned on both sides.
