Fried Game Rissoles

Ingredients

  • scraps of cold game
  • very stiff second stock
  • lemon juice
  • pepper
  • salt
  • egg
  • bread-crumbs
  • hot fat for frying

Method

  1. 1 Mince the game finely.
  2. 2 Melt the stock and moisten the game well with it. Add pepper, salt, and a few drops of lemon juice.
  3. 3 Spread the mixture on a plate to cool until firm.
  4. 4 Mould the mixture into balls or egg shapes.
  5. 5 Cover with egg and bread-crumbs, then fry in hot fat until golden.
  6. 6 Serve on a folded napkin and garnish with fried parsley.
