Fried Game Rissoles
Ingredients
- scraps of cold game
- very stiff second stock
- lemon juice
- pepper
- salt
- egg
- bread-crumbs
- hot fat for frying
Method
- 1 Mince the game finely.
- 2 Melt the stock and moisten the game well with it. Add pepper, salt, and a few drops of lemon juice.
- 3 Spread the mixture on a plate to cool until firm.
- 4 Mould the mixture into balls or egg shapes.
- 5 Cover with egg and bread-crumbs, then fry in hot fat until golden.
- 6 Serve on a folded napkin and garnish with fried parsley.
