Fried Fish Croquettes

Ingredients

  • 1 cup flaked boiled fish
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1/2 cup milk
  • 2 beaten eggs
  • salt and pepper to taste
  • oil for frying

Method

  1. 1 Make a stiff cream sauce by cooking butter and flour, then whisking in milk until thick.
  2. 2 Mix the stiff sauce with the flaked fish, beaten eggs, salt, and pepper until well combined.
  3. 3 Drop spoonfuls of the mixture into very hot fat and fry until puffed and light.
