Fried Fish Croquettes
Ingredients
- 1 cup flaked boiled fish
- 1 tablespoon butter
- 1 tablespoon flour
- 1/2 cup milk
- 2 beaten eggs
- salt and pepper to taste
- oil for frying
Method
- 1 Make a stiff cream sauce by cooking butter and flour, then whisking in milk until thick.
- 2 Mix the stiff sauce with the flaked fish, beaten eggs, salt, and pepper until well combined.
- 3 Drop spoonfuls of the mixture into very hot fat and fry until puffed and light.
