Fried Fish And Potato Croquettes
Ingredients
- 1 lb cooked fish (haddock, cod, ling, or hake)
- 1 lb boiled potatoes
- 1 oz butter
- 2 or 3 eggs
- Salt and pepper
- White bread crumbs
- Parsley
- Hot fat for frying
Method
- 1 Rub boiled potatoes through a sieve.
- 2 Break fish into flakes, removing bones.
- 3 Mix fish and potatoes with butter, pepper, salt, and one well-beaten egg.
- 4 Form mixture into balls or cakes.
- 5 Coat with beaten egg and bread crumbs.
- 6 Fry in hot fat until golden.
- 7 Serve on a folded napkin garnished with fried parsley.
