Fried Fish And Potato Croquettes

Ingredients

  • 1 lb cooked fish (haddock, cod, ling, or hake)
  • 1 lb boiled potatoes
  • 1 oz butter
  • 2 or 3 eggs
  • Salt and pepper
  • White bread crumbs
  • Parsley
  • Hot fat for frying

Method

  1. 1 Rub boiled potatoes through a sieve.
  2. 2 Break fish into flakes, removing bones.
  3. 3 Mix fish and potatoes with butter, pepper, salt, and one well-beaten egg.
  4. 4 Form mixture into balls or cakes.
  5. 5 Coat with beaten egg and bread crumbs.
  6. 6 Fry in hot fat until golden.
  7. 7 Serve on a folded napkin garnished with fried parsley.
