  • 1 eggplant (medium-sized)
  • salt
  • flour
  • oil for frying

Method

  1. 1 Peel the eggplant and cut into cubes.
  2. 2 Salt the cubes and let them sit on a plate for a few hours to draw out bitterness.
  3. 3 Wipe the cubes dry to remove the released juice.
  4. 4 Dip the cubes in flour, coating lightly.
  5. 5 Fry in oil until golden brown.
