Fried Eggplant Cubes
Ingredients
- 1 eggplant (medium-sized)
- salt
- flour
- oil for frying
Method
- 1 Peel the eggplant and cut into cubes.
- 2 Salt the cubes and let them sit on a plate for a few hours to draw out bitterness.
- 3 Wipe the cubes dry to remove the released juice.
- 4 Dip the cubes in flour, coating lightly.
- 5 Fry in oil until golden brown.
