Fried Eggplant And Meat Stew

Ingredients

• 1 lb meat, cut into small pieces
• 1 eggplant, thinly sliced
• batter for coating
• breadcrumbs for coating
• water
• seasoning to taste

Method

1. 1 Fry the meat pieces in a pan until browned, then remove from the pan.
2. 2 Roll the sliced eggplant in batter and breadcrumbs, then fry in the same pan.
3. 3 Layer the fried eggplant and meat in a cooking vessel.
4. 4 Add a little water and cook slowly until the meat is tender.
