Fried Eggplant And Meat Stew
Ingredients
- 1 lb meat, cut into small pieces
- 1 eggplant, thinly sliced
- batter for coating
- breadcrumbs for coating
- water
- seasoning to taste
Method
- 1 Fry the meat pieces in a pan until browned, then remove from the pan.
- 2 Roll the sliced eggplant in batter and breadcrumbs, then fry in the same pan.
- 3 Layer the fried eggplant and meat in a cooking vessel.
- 4 Add a little water and cook slowly until the meat is tender.
