Fried Cream Of Wheat Pancakes With Coconut And Raisins
Ingredients
- 1 pound cream of wheat
- water
- 1 cup grated coconut
- 1 cup small raisins
- 2 eggs
- 1 cup sugar
- ½ cup curds
- a little flour
- oil for frying
Method
- 1 Mix cream of wheat and water to form a very thick batter.
- 2 Let the batter stand for two days.
- 3 Stir in coconut, raisins, eggs, sugar, curds, and a little flour.
- 4 Fry spoonfuls on a griddle like pancakes until golden.
- 5 Serve cold.
