Fried Crab Meat Balls
Ingredients
- 2 ounces bacon, minced
- 2 green peppers, finely chopped
- ½ cup canned tomatoes, pressed dry
- 2 tomatoes, finely chopped
- 3 onions, finely chopped
- 1½ cups crab meat
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 tablespoon Worcestershire sauce
- flour for coating
- 1 egg, beaten
- hot fat for frying
Method
- 1 Brown minced bacon quickly in a pan, then add chopped peppers, tomatoes, and onions.
- 2 Cook gently until the vegetable mixture is soft and dry.
- 3 Stir in crab meat, salt, paprika, and Worcestershire sauce; mix well.
- 4 Form mixture into fishcake-sized balls, roll in flour, then dip in beaten egg.
- 5 Fry in hot fat until golden brown and serve with tartare sauce.
