Fried Crab Meat Balls

Ingredients

  • 2 ounces bacon, minced
  • 2 green peppers, finely chopped
  • ½ cup canned tomatoes, pressed dry
  • 2 tomatoes, finely chopped
  • 3 onions, finely chopped
  • 1½ cups crab meat
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 tablespoon Worcestershire sauce
  • flour for coating
  • 1 egg, beaten
  • hot fat for frying

Method

  1. 1 Brown minced bacon quickly in a pan, then add chopped peppers, tomatoes, and onions.
  2. 2 Cook gently until the vegetable mixture is soft and dry.
  3. 3 Stir in crab meat, salt, paprika, and Worcestershire sauce; mix well.
  4. 4 Form mixture into fishcake-sized balls, roll in flour, then dip in beaten egg.
  5. 5 Fry in hot fat until golden brown and serve with tartare sauce.
