Fried Cornmeal Nut Cakes
Ingredients
- 2 cups yellow cornmeal
- 2 tablespoons melted Crisco
- 3 cups boiling water
- 1 teaspoon salt
- 1 egg
- 1/2 cup chopped nut meats
Method
- 1 Bring water and salt to a boil in a pot.
- 2 Stir in cornmeal and chopped nut meats, then cook for 10 minutes, stirring constantly.
- 3 Remove from heat and stir in the beaten egg and melted Crisco.
- 4 Pour the mixture into a Crisco-greased tin and let it cool completely.
- 5 Slice the cooled cake and fry slices in hot Crisco until golden.
- 6 Serve warm with honey or maple syrup.
