Fried Cornmeal Nut Cakes

Ingredients

  • 2 cups yellow cornmeal
  • 2 tablespoons melted Crisco
  • 3 cups boiling water
  • 1 teaspoon salt
  • 1 egg
  • 1/2 cup chopped nut meats

Method

  1. 1 Bring water and salt to a boil in a pot.
  2. 2 Stir in cornmeal and chopped nut meats, then cook for 10 minutes, stirring constantly.
  3. 3 Remove from heat and stir in the beaten egg and melted Crisco.
  4. 4 Pour the mixture into a Crisco-greased tin and let it cool completely.
  5. 5 Slice the cooled cake and fry slices in hot Crisco until golden.
  6. 6 Serve warm with honey or maple syrup.
