Fried Cornmeal Drop Biscuits
Ingredients
- 1 cup boiling water
- 1 cup cornmeal
- 1 tsp salt
- 1 tbsp sugar
- 2 eggs, well beaten
- 1 tbsp flour
- oil for frying
Method
- 1 Pour boiling water over cornmeal, salt, and sugar. Beat well and refrigerate overnight.
- 2 Stir beaten eggs and flour into the chilled batter.
- 3 Drop spoonfuls into hot oil and fry for 10 minutes until golden.
