Fried Cornmeal Drop Biscuits

Ingredients

  • 1 cup boiling water
  • 1 cup cornmeal
  • 1 tsp salt
  • 1 tbsp sugar
  • 2 eggs, well beaten
  • 1 tbsp flour
  • oil for frying

Method

  1. 1 Pour boiling water over cornmeal, salt, and sugar. Beat well and refrigerate overnight.
  2. 2 Stir beaten eggs and flour into the chilled batter.
  3. 3 Drop spoonfuls into hot oil and fry for 10 minutes until golden.
