Fried Cornmeal Cakes

Ingredients

  • 2 cups hot cornmeal mush
  • 1 tablespoon melted butter
  • 2 eggs, unbeaten
  • Flour for dredging

Method

  1. 1 Add melted butter and unbeaten eggs to the hot cornmeal mush. Mix well.
  2. 2 Allow the mixture to cool until it can be handled.
  3. 3 Shape the mixture into small flat cakes.
  4. 4 Dredge the cakes in flour.
  5. 5 Fry in oil until browned on both sides.
