Fried Cornmeal Cakes
Ingredients
- 2 cups hot cornmeal mush
- 1 tablespoon melted butter
- 2 eggs, unbeaten
- Flour for dredging
Method
- 1 Add melted butter and unbeaten eggs to the hot cornmeal mush. Mix well.
- 2 Allow the mixture to cool until it can be handled.
- 3 Shape the mixture into small flat cakes.
- 4 Dredge the cakes in flour.
- 5 Fry in oil until browned on both sides.
