Fried Corn And Egg Cakes
Ingredients
- 12 ears of corn
- Salt and pepper to taste
- 4 eggs, beaten
Method
- 1 Score the kernels off the cobs and press out the pulp.
- 2 Season the corn pulp highly with salt and pepper.
- 3 Stir in the beaten eggs.
- 4 Drop spoonfuls of the mixture onto a hot griddle.
- 5 Fry carefully, turning once until golden brown.
