Fried Codfish And Potato Croquettes

Ingredients

  • 1 lb potatoes
  • ½ lb soaked and drained codfish
  • 1 tbsp butter
  • 2 egg yolks
  • ½ tsp salt
  • dash of pepper
  • beaten egg for dipping
  • bread crumbs for coating
  • hot fat for frying

Method

  1. 1 Boil and mash potatoes. Pick apart soaked and drained codfish.
  2. 2 Mix fish with potatoes, adding butter, egg yolks, salt, and pepper.
  3. 3 Form mixture into balls.
  4. 4 Dip balls in beaten egg, then coat with bread crumbs.
  5. 5 Fry in hot fat until golden brown.
