Fried Clam Fritters
Ingredients
- 1 dozen large clams, minced and drained
- 1 ½ cups clam liquid and milk mixture
- 1 egg
- 2 teaspoons salt
- 1 teaspoon paprika
- 2 tablespoons grated onion
- 4 tablespoons finely chopped parsley
- 1 tablespoon shortening
- 1 teaspoon sugar
- 2 cups sifted flour
- 4 level teaspoons baking powder
- oil for frying
Method
- 1 Mince clams fine and drain. Measure the liquid and add enough milk to make 1 ½ cups total.
- 2 In a bowl, combine the liquid mixture, egg, salt, paprika, onion, parsley, shortening, and sugar.
- 3 Add the minced clams, sifted flour, and baking powder. Beat the mixture hard until smooth.
- 4 Fry spoonfuls in very hot fat in a shallow pan until golden brown.
