Fried Choux Dumplings For Soup
Ingredients
- ¼ cup milk
- 1 tablespoon butter
- 2 ounces sifted flour
- 2 eggs
- Flour for dredging
- Oil for frying
Method
- 1 Heat milk and butter in a saucepan over medium heat until boiling.
- 2 Remove from heat, add flour, and stir vigorously until the mixture forms a smooth, thick ball.
- 3 Beat in eggs one at a time until fully incorporated and smooth.
- 4 Spread the dough thinly on a surface, let cool slightly, then cut into small bean-sized pieces.
- 5 Dredge pieces in flour, shake off excess, and fry in hot oil until golden brown.
- 6 Add the fried dumplings to soup just before serving.
