Fried Chicken Fillets
Ingredients
- 1 large stewing chicken
- flour
- beaten egg
- fine bread crumbs
- hot fat for frying
Method
- 1 Singe, draw, and wash the chicken. Cook until tender, then let cool.
- 2 Remove wings, legs, and thighs. Cut breast into slices larger than an oyster. Remove bones and cut meat into neat fillets.
- 3 If meat breaks, press firmly together. Season, roll in flour, dip in beaten egg, then roll in bread crumbs. Press firmly.
- 4 Fry in hot fat until golden brown. Can be prepared early and reheated in the oven.
