Fried Cauliflower With Brandy Batter
Ingredients
- 1 large cauliflower, cut into quarters
- Salt and pepper to taste
- Vinegar
- 3 tbsp flour
- 3 eggs, separated
- 1 tbsp butter, melted
- 1 tbsp sweet oil
- 1 tbsp brandy
- Fried parsley for garnish
Method
- 1 Boil cauliflower quarters in salted water until tender enough to nip with fingers. Drain well.
- 2 Marinate cauliflower in salt, pepper, and vinegar for 30 minutes, turning frequently.
- 3 Mix flour, egg yolks, melted butter, oil, and brandy. Let rest 30 minutes.
- 4 Beat egg whites to stiff peaks and fold into batter.
- 5 Dip cauliflower in batter and fry until light brown.
- 6 Rest in pan 15 minutes before serving. Garnish with fried parsley.
