Fried Cauliflower With Brandy Batter

Ingredients

  • 1 large cauliflower, cut into quarters
  • Salt and pepper to taste
  • Vinegar
  • 3 tbsp flour
  • 3 eggs, separated
  • 1 tbsp butter, melted
  • 1 tbsp sweet oil
  • 1 tbsp brandy
  • Fried parsley for garnish

Method

  1. 1 Boil cauliflower quarters in salted water until tender enough to nip with fingers. Drain well.
  2. 2 Marinate cauliflower in salt, pepper, and vinegar for 30 minutes, turning frequently.
  3. 3 Mix flour, egg yolks, melted butter, oil, and brandy. Let rest 30 minutes.
  4. 4 Beat egg whites to stiff peaks and fold into batter.
  5. 5 Dip cauliflower in batter and fry until light brown.
  6. 6 Rest in pan 15 minutes before serving. Garnish with fried parsley.
