Fried Brussels Sprout Sausages
Ingredients
- 4 ounces cooked Brussels sprouts
- 2 ounces mashed potatoes
- 2 ounces bread crumbs
- 1 ounce butter
- 1 teaspoon dried sage
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 egg, beaten
Method
- 1 Mix the cooked Brussels sprouts, mashed potatoes, bread crumbs, sage, salt, and pepper in a bowl until well combined.
- 2 Moisten the mixture with half of the beaten egg and shape into small sausage links.
- 3 Roll the sausages in the remaining egg and bread crumbs to coat evenly.
- 4 Fry in butter or hot oil until golden brown and heated through.
