Fried Brussels Sprout Sausages

Ingredients

  • 4 ounces cooked Brussels sprouts
  • 2 ounces mashed potatoes
  • 2 ounces bread crumbs
  • 1 ounce butter
  • 1 teaspoon dried sage
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 egg, beaten

Method

  1. 1 Mix the cooked Brussels sprouts, mashed potatoes, bread crumbs, sage, salt, and pepper in a bowl until well combined.
  2. 2 Moisten the mixture with half of the beaten egg and shape into small sausage links.
  3. 3 Roll the sausages in the remaining egg and bread crumbs to coat evenly.
  4. 4 Fry in butter or hot oil until golden brown and heated through.
