Fried Breaded Mutton Collops
Ingredients
- thin slices of roasted or boiled mutton
- 1 egg yolk
- fine dry bread crumbs
- 1 tbsp flour
- salt and pepper to taste
- butter for frying
Method
- 1 Combine bread crumbs, flour, salt, and pepper in a shallow dish.
- 2 Dip mutton slices in egg yolk, then coat thoroughly in the breadcrumb mixture.
- 3 Melt butter in a skillet over medium-low heat.
- 4 Fry mutton slices until browned on both sides, cooking slowly to avoid burning.
- 5 Serve garnished with fried potatoes or potato chips.
