Fried Bread Cutlets With Tomato Sauce

Ingredients

  • slices of stale homemade bread, about ½ inch thick
  • rich, well-seasoned vegetable stock
  • beaten egg
  • a little milk
  • butter for frying
  • tomato sauce or stewed tomatoes for serving

Method

  1. 1 Cut stale bread into ½-inch thick slices and shape them to resemble chops.
  2. 2 Soak the bread slices in seasoned vegetable stock until nearly saturated but not too soft.
  3. 3 Dip the soaked bread in a mixture of beaten egg and a little milk.
  4. 4 Fry in butter in a skillet until golden brown on both sides.
  5. 5 Serve with tomato sauce or alongside a dish of stewed tomatoes.
