Fried Bread Cups With Savory Filling
Ingredients
- 1 loaf day-old bread
- hot fat for frying
- 1 egg white, beaten
- filling of choice (mushrooms, chicken livers, creamed chicken, or salpicon)
Method
- 1 Remove crusts from the bread and carve the loaf into vase or cup shapes using a sharp knife.
- 2 Fry the bread cups in hot fat until golden brown on all sides.
- 3 Brush the inside of each fried cup with beaten egg white to prevent soaking.
- 4 Heat the croustades briefly, then fill with your chosen filling just before serving.
