Fried Bread Cups With Savory Filling

Ingredients

  • 1 loaf day-old bread
  • hot fat for frying
  • 1 egg white, beaten
  • filling of choice (mushrooms, chicken livers, creamed chicken, or salpicon)

Method

  1. 1 Remove crusts from the bread and carve the loaf into vase or cup shapes using a sharp knife.
  2. 2 Fry the bread cups in hot fat until golden brown on all sides.
  3. 3 Brush the inside of each fried cup with beaten egg white to prevent soaking.
  4. 4 Heat the croustades briefly, then fill with your chosen filling just before serving.
