  • cold cooked beef, chopped very fine
  • salt
  • cayenne
  • minced parsley
  • grated onion
  • bread crumbs (one-fourth the quantity of beef)
  • beaten egg (enough to bind)
  • flour (for dredging)

Method

  1. 1 Chop cold cooked beef very fine and place in a bowl.
  2. 2 Season with salt, cayenne, minced parsley, and grated onion.
  3. 3 Add bread crumbs equal to one-fourth the quantity of beef and enough beaten egg to bind the mixture.
  4. 4 Shape the mixture into balls or small flat cakes.
  5. 5 Dredge the balls in flour and fry in oil until brown.
