Fried Batter-Coated Peaches

Ingredients

  • firm peaches, peeled, stoned, and halved
  • sugar, for tossing peaches
  • 1 pound flour
  • ½ pint water
  • 2 egg whites, stiffly beaten
  • 1¼ ounces melted butter
  • olive oil, for frying
  • powdered sugar, for dusting

Method

  1. 1 Toss peach halves with sugar in a bowl, being careful not to break them.
  2. 2 In a basin, stir flour into water gradually to form a batter.
  3. 3 Mix in the stiffly beaten egg whites and melted butter.
  4. 4 Heat olive oil in a frying pan until hot.
  5. 5 Dip each peach piece into the batter and fry in the oil until lightly browned.
  6. 6 Drain on a cloth or paper towel.
  7. 7 Place on a baking dish, sift powdered sugar over, and glaze in a hot oven for a few minutes.
  8. 8 Arrange in a pyramid shape on a folded napkin on a hot dish and serve immediately.
