Fried Artichoke Hearts With Lemon
Ingredients
- 2 artichokes
- flour
- 1 egg
- salt
- boiling fat, butter, or olive oil
- lemon
Method
- 1 Cut artichokes in half, removing hard parts of leaves and stalk. Slice halves into 8-10 pieces per artichoke.
- 2 Wash pieces in cold water and dry slightly. Toss in flour, shaking off excess.
- 3 Beat egg white without froth, mix with yolk, and add salt. Dip floured artichoke pieces into the egg mixture.
- 4 Fry pieces in hot fat, butter, or oil until well browned. Serve immediately with lemon.
