Fresh Tomato Pasta Sauce

Ingredients

  • 6 cups ripe tomatoes, chopped
  • 1/2 cup vegetable oil
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/2 teaspoon thinly sliced or shredded carrot
  • 1 teaspoon dried oregano
  • 2 teaspoons dried basil
  • 6 cloves garlic, minced (or 1/2 teaspoon garlic powder)
  • Pepper to taste
  • 6 cups cooked pasta
  • 6 tablespoons grated Parmesan cheese

Method

  1. 1 Wash tomatoes, remove stems, chop into small pieces, and set aside in a large bowl.
  2. 2 Heat oil in a large pan over medium-high heat. Add onion, green pepper, carrots, and garlic; stir-fry until tender, about 3 minutes.
  3. 3 Add oregano, basil, garlic powder (if using), pepper, and chopped tomatoes. Bring to a gentle boil.
  4. 4 Reduce heat and simmer uncovered until tomatoes break down into a sauce, about 40 minutes. Serve over cooked pasta with Parmesan.
