Fresh Tomato Pasta Sauce
Ingredients
- 6 cups ripe tomatoes, chopped
- 1/2 cup vegetable oil
- 1/2 cup chopped onion
- 1/4 cup chopped green pepper
- 1/2 teaspoon thinly sliced or shredded carrot
- 1 teaspoon dried oregano
- 2 teaspoons dried basil
- 6 cloves garlic, minced (or 1/2 teaspoon garlic powder)
- Pepper to taste
- 6 cups cooked pasta
- 6 tablespoons grated Parmesan cheese
Method
- 1 Wash tomatoes, remove stems, chop into small pieces, and set aside in a large bowl.
- 2 Heat oil in a large pan over medium-high heat. Add onion, green pepper, carrots, and garlic; stir-fry until tender, about 3 minutes.
- 3 Add oregano, basil, garlic powder (if using), pepper, and chopped tomatoes. Bring to a gentle boil.
- 4 Reduce heat and simmer uncovered until tomatoes break down into a sauce, about 40 minutes. Serve over cooked pasta with Parmesan.
