Fresh Lemon Syrup

Ingredients

  • 1 quart fresh lemon juice
  • Yellow zest of 6 lemons
  • 1 quart boiling water
  • 4 pounds white sugar

Method

  1. 1 Combine lemon juice, lemon zest, boiling water, and sugar in a large pot.
  2. 2 Let the mixture stand for 24 hours to allow the sugar to dissolve.
  3. 3 If the sugar has not fully dissolved, gently heat the mixture until it dissolves.
  4. 4 Filter the syrup through a jelly bag or fine-mesh strainer.
  5. 5 Bottle tightly and store in a cool place for up to three months.
