Fresh Lemon Syrup
Ingredients
- 1 quart fresh lemon juice
- Yellow zest of 6 lemons
- 1 quart boiling water
- 4 pounds white sugar
Method
- 1 Combine lemon juice, lemon zest, boiling water, and sugar in a large pot.
- 2 Let the mixture stand for 24 hours to allow the sugar to dissolve.
- 3 If the sugar has not fully dissolved, gently heat the mixture until it dissolves.
- 4 Filter the syrup through a jelly bag or fine-mesh strainer.
- 5 Bottle tightly and store in a cool place for up to three months.
