Fresh Green Pea Souffle

Ingredients

  • 1 pint young peas, shelled
  • 2 eggs
  • 0.5 teaspoon salt
  • 0.5 pint water
  • 1 ounce butter
  • 1 sprig mint

Method

  1. 1 Boil peas, half the butter, mint, and salt in water for 30 minutes uncovered.
  2. 2 Remove mint and let mixture cool slightly.
  3. 3 Grease a pie dish with remaining butter.
  4. 4 Stir egg yolks into peas, then fold in beaten egg whites.
  5. 5 Pour into dish and bake for 20 minutes.
