Fresh Green Pea Souffle
Ingredients
- 1 pint young peas, shelled
- 2 eggs
- 0.5 teaspoon salt
- 0.5 pint water
- 1 ounce butter
- 1 sprig mint
Method
- 1 Boil peas, half the butter, mint, and salt in water for 30 minutes uncovered.
- 2 Remove mint and let mixture cool slightly.
- 3 Grease a pie dish with remaining butter.
- 4 Stir egg yolks into peas, then fold in beaten egg whites.
- 5 Pour into dish and bake for 20 minutes.
