Fresh Green Pea And Mint Soup
Ingredients
- 2 pints shelled green peas
- 1 ounce butter
- 1 handful fresh mint
- 1 head cabbage lettuce
- 3 pints water
- 1 ½ teaspoons salt
- 1 onion
- 1 lump sugar
Method
- 1 Dissolve butter in a large saucepan over medium heat.
- 2 Add peas, sliced onion, washed lettuce, mint, water, salt, and sugar.
- 3 Boil for 1.5 hours, then strain through a wire sieve, rubbing peas through with a wooden spoon.
